Spicy Mojito Mahi Mahi for 2

This easy-to-make mahi mahi dish features the sweet and tangy flavors of the cool, refreshing Mojito cocktail. The addition of mildly spicy green pepper sauce adds just the right amount of zing.
Serve this with fried bananas (either sweet maduros or crunchy tostones) and garlicky black beans over white rice for a delicious South Florida-style meal.

Makes 2 servings of Spicy Mojito Mahi Mahi.
Prep Time: 25 minutes
Ingredients

3 tablespoons fresh lime juice

1 tablespoon light rum

1 tablespoon finely chopped mint

2 teaspoons sugar

2 teaspoons green hot pepper sauce (mild type)

1/4 teaspoon salt

2 8oz mahi mahi fillets (preferably skin on)

Light olive oil or canola

Coarse sea salt or kosher salt

Cook Time: 8 minutes

Total Time: 33 minutes
Yield: 2 servings

Preparation

Combine the first six ingredients (lime juice through 1/4 tsp salt) in a bowl and mix well. Add fish to marinade, skin side up, making sure all pieces are covered; refrigerate for 15-20 minutes.

Heat grill to medium-high. Remove fish from marinade and pat dry with paper towels. Brush fillets lightly with oil and grill, skin side up, for 3-5 minutes (depending on thickness.) Turn carefully and grill 2-3 minutes more. Sprinkle with a pinch of coarse salt and serve.

If you like more heat, top with a few more drops of pepper sauce instead of the salt.
